Ingredients:
- For the pie crust
- 2 1/2 Cups All purpose flour (350 grams)
- 1/2 tsp Salt
- 1 1/2 Cups Butter (225 grams)
- 1 tsp Granulated Sugar
- 5 tbsp Ice cold water
- For the Apple filling
- 4 large Apples (650 grams)
- 2 tbsp butter (15 grams)
- 4 tbsp brown sugar (55 grams)
- 4 tbsp granulated sugar (55 grams)
- 1 1/2 tsp Cinnamon powder
- 1 tbsp Lemon juice
- 1 1/2 tbsp Corn flour/starch
Method:
- Method for the pie crust
- Take cold butter in a large bowl and add the all purpose flour, salt and sugar. Use your fingers to combine the butter and flour to create a crumb like texture. Alternatively you can even use a food processor for this.
- Add ice cold water (initially 4 tbsp) and continue using your hands to form a dough.
- Do not knead. Just try to bring everything together. Add 1 more tbsp water and continue to form a dough ball.
- Divide the dough in 2 equal parts and wrap them in cling film and place in the refrigerator for and hour.
- Method for Apple filling
- Wash, peel and slice the apples.
- Place a pan on heat and add butter to it.
- Let the butter melt, add chopped apples, brown sugar, granulated sugar and cinnamon powder to it.
- Cook the mixture till the apples start releasing their juice. This takes approximately 5-6 minutes.
- Add lemon juice to the mixture and switch off the flame.
- Separate the juice released by the apples and sugar by taking it out in a bowl.
- Add cornflour/starch to the apples and mix well.
- Heat the separated juice in the pan till it thickens.
- Keep it aside.
- Meanwhile take out the dough from the refrigerator.
- Dust the worktop and the rolling pin with dry flour and roll the dough to at least 11 inch diameter circle.
- Use the tart tin or baking pan that you are going to use for the pie for measurements.
- The rolled dough should be bigger than the baking pan/tart tin.
- Dust the rolling pin and rolled dough with dry flour and gently lift the dough with the help of rolling pin to place it on the greased baking pan. (watch video for more clarity)
- Using your hands gently push the dough to form the shape of the pan.
- Now using the thumb and index finger give the edges shape.(watch video for clarity)
- Now prick the pie crust using a fork.
- Add the apple mixture in the center and pour the thickened juice on it.
- Roll the second dough in 10 inch diameter circle and cut strips using a knife or a pizza cutter.
- Arrange the strips in the pattern as shown in the video to give a weaved look.
- Seal the edges.
- Take some milk and sugar mixture and brush the top.
- Bake at 180C for 40-45 minutes or until you see brown crust formed and the filling starts bubbling. As the oven temperatures vary, adjust according to your oven.
- Remove from oven and let it rest till cool down.
