Ingredients:
- Ingredients for baking potatoes
- 3 potatoes
- 1/8 tsp crushed black pepper
- Salt as per taste
- 1 tbsp oil
- 1/4 tsp red chili powder
- Ingredients for sauce
- 2 tbsp oil
- 2-3 spring onion bulbs chopped
- 1 spring onion green chopped
- 1/4 Capsicum/Bell pepper thinly sliced
- 1 tbsp grated garlic (3-4 pods)
- 1 inch ginger grated
- 1 tbsp soy sauce
- 1 tbsp red chili sauce
- 1 tbsp tomato ketchup
- 1 tbsp corn starch/flour
- 150 ml water
- 1 tsp honey
- 1 tsp sugar
- Salt as per taste
- 1/2 tsp sesame seeds
Method:
- Peel and chop the potatoes in slices like french fries.
- Add oil, black pepper, red chili powder and salt and mix gently.
- Spread cut potatoes on a baking sheet lined with parchment paper.
- Bake for 30 minutes at 200 C
- For the sauce take a bowl and add water to it.
- Add corn starch/flour and stir to avoid lumps.
- Now add the soy sauce, chili sauce and tomato ketchup and stir to combine well.
- Set it aside.
- Heat a pan and add oil to it.Add grated ginger and garlic and saute for half a minute.Add spring onion bulbs and Capsicum/bell pepper. Saute for 2-3 minutes on medium to high flame.
- Pour the water with corn starch and sauces and stir continuously to avoid lumps.
- The mixture starts thickening after a minute or two.
- Add sugar and salt to it.
- Lower the flame and add the baked potato fries to the thickened sauce.
- Mix gently.Now add the honey and spring onion greens.
- Transfer to a plating bowl and sprinkle sesame seeds and spring onion greens.
- The spice content is kept low in this recipe. For a spicier version add more chili sauce and red chili powder.
