Ingredients:
- 2 large ripe banana
- 1 cup (180 gms) powdered sugar
- 1/2 (120 ml) cup oil
- 2 cup (270 gms) all porpose flour
- 3 tbsp (45 gms) cocoa powder
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tsp white vinegar
- 1 tsp vanilla essence
- 100 ml water
- 2 tbsp (30 gms) walnuts
- 2 tbsp (30 gms) choco chips
Method:
- Pre-heat the oven at 180 C.
- Line a bread loaf tin with parchment paper and keep it aside.
- Take 2 large ripe bananas and blend them in a mixer with powdered sugar into a smooth paste.
- Take it out in a large bowl and add the oil and vinegar. Whisk well for 2-3 minutes till they are combined.
- Now add the vanilla essence and stir.
- Place a seive on the bowl and sift the dry ingredients i.e. flour, cocoa powder, salt, baking soda and baking powder in the wet mixture.
- Mix well using the cut and fold method (do not over mix). Now add the chopped walnuts.
- Add water and mix till the batter turns smooth.
- Add the batter to the lined loaf tin. Add chocolate chips and tap the tin 2-3 times to remove any air bubbles.
- Place the tin in the preheated oven and bake for 40 minutes. Once done take the loaf tin out of the oven and insert a skewer and check if its baked completely. Skewer should come out clean.
- Let the bread cool for at-least an hour.
- Once cooled take the bread out and cut into thick slices.
- Your spongy and fluffy chocolate banana bread is ready to be served.
