Ingredients:
- 1/4 (50 grams) cup yellow moon dal
- 1/8 cup (20 grams) green split dal
- 1/8 cup (30 grams) pegion pea dal
- 1 tsp chana dal
- 3 cups spinach - chopped and tightly packed
- 1 tsp fresh coriander - finely chopped
- 1 green chili - chopped
- 1 inch ginger - grated
- 4-5 curry leaves
- 3 cups warm water
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp kashmiri red chili powder
- 1 tsp coriander powder
- 1 tsp kasuri methi
- 1/2 tsp dry mango (amchoor) powder
- Pinch of asafoetida
- 2 tbsp ghee (clarified butter) / oil
- Salt as per taste
Method:
- Mix all dals and soaked then in water for 30 minutes. Put it aside.
- Add ghee or oil to a pressure cooker and place it on medium heat.
- Once the ghee/oil heats add cumin seeds and let them crackle.
- Now add the asafoetida.
- Add the Curry leaves, green chili and ginger and saute on low flame for 1 minute.
- Now add the chopped tomatoes and saute for a minute. Add the turmeric, red chili and coriander powder and mix.
- Cover the cooker with the lid loosely for 2-3 minutes. Now add the soaked dal and mix well at medium flame. Add salt and cover the cooker for a minute. Add the dry mango powder.
- Further add the chopped spinach and mix well. Now add warm water and close the pressure cooker and cook the dal for 3 whistles.
- Once the dal palak is done add crushed kasuri methi and garnish with fresh chopped coriander leaves.
- Dal palak can be served with roti (indian flat bread) or rice.
