Digestive Biscuits #homemade

Ingredients:

  • 1 1/2 cup Whole Wheat Flour (~200grams)
  • 1/2 cup + 2 tbsp Powdered Sugar (70 grams)
  • 1/2 cup Salted Cold Butter (120 grams)
  • 1 1/2 tsp Honey
  • 1 tsp Baking Powder (3 grams)
  • 2-3 tbsp Cold Milk
  • *1/2 tsp Salt (if using Unsalted Butter)

Method:

  • Take a large bowl and place a sieve over it.
  • Seive the dry ingredients (flour, powdered sugar, baking powder and *salt (if using unsalted butter)
  • Add the cube cold butter and using your hands rub the butter with the dry ingredients till the mixture looks like breadcrumbs in texture.
  • Now, add the honey and cold milk(adding 1 tbsp at a time).
  • Bring the mixture together to form a dough.
  • Do not knead but just try to bring the dough together gently.
  • Divide the dough in two parts
  • Roll one part between parchment/butter paper or polythene bag to 5mm thickness.
  • Take a round cookie cutter/ round shaped bottle lid/bowl and cut the circles.
  • Pick up the biscuit circles one by one and place it on a baking tray lined with parchment paper.
  • Stamp the biscuits with 'Digestive' alphabets(optional step-can be skipped if you don't have a stamp)
  • Now, take a toothpick and make holes like the ones on Digestive Biscuits.
  • Bake in a preheated oven in the middle rack at 170 C for 15 minutes or till the edges start browning.
  • Make sure to keep a check on the biscuits after 13 minutes to avoid burning them.
  • Once done the Biscuits will be soft to touch and can break easily so let them cool completely on a wire rack.
  • The biscuits will become crispy once cooled.
  • Enjoy your homemade Digestive Biscuits with hot cup of coffee or tea.
