Description: Homemade ghee (clarified butter) from unsalted butter is the most widely used fat for Indian cooking. It is also used as offering in pooja and during Indian festivals.
Motivation: Making ghee at home is much easier task than it seems and you can end up saving some money too.
When I moved to a foreign country I would bring Ghee from the Indian store but I always missed that fragrance and the nutty flavor that we get in India from the home made ghee.
Then I got my hands on this super easy ghee recipe from unsalted butter and there was no looking back to the store brought ghee.
Here I will share with you this quick recipe.
Ingredients:
- 1 kg unsalted butter sticks (I used 4 sticks of 250 grams each)
Method:
- Take a thick bottomed pan and add the butter sticks to it and heat on medium flame till the butter melts.
- Initially it will be opaque/yellow as in picture 2 in collage.
- Now keep stirring at intervals till the color of the ghee changes and you see big clear bubbles. After some time (approx 10 minutes) the milk solids start separating and settling down in the pan.
- The mixture now starts getting clear. As shown in the 3rd picture of collage.Make sure that you have to brown (not burn) the ghee.
- Line a seive in a large pan and filter out the ghee.Once it cools down a little transfer the ghee to a glass jar.
Handy Tips:
- Always use a clean and dry spoon to scoop out the ghee for increased shelf life.
- 1 kg of unsalted butter yields approximate 800 grams of ghee.
