Grilled Vegetable Mayonnaise Sandwich

Ingredients:

  • 8 bread slices
  • 1/2 cup egg-less mayonnaise
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped carrot
  • 1/4 cup finely chopped capsicum
  • 1 tsp black pepper crushed
  • Salt and black pepper as per taste

Method:

  • Cut the side crust of the bread.
  • Take a large bowl and add the onions, carrot, capsicum, mayonnaise, salt and black pepper. 
  • Mix well.
  • Apply butter on one side of the bread and and spread a big spoonful of the mayo-veg mixture.
  • Apply tomato ketchup on the other slice and place it on the slice with veg-mayo.
  • Apply butter on top and grill in a sandwich griller.

Notes:

  • You can add vegetables of your choice
  • Seasoning can be changed according to preference.
  • Alternatively you can apply green coriander chutney on one the bread instead of tomato ketchup.
  • You can even toast the sandwich on a tava.
