Oven Roasted Egg Plant (Brinjal)

Ingredients:

  • 2 egg plant 500 grams (sliced in discs of 1/4 inch thickness)
  • 1 tsp turmeric powder
  • 1 tsp kashmiri red chili powder
  • 1 tsp coriander powder
  • 1 tsp dry mango powder
  • 1 tsp salt
  • 1/4 tsp roasted cumin seeds
  • 1/4 tsp garam masala
  • 1 tsp kasuri methi
  • 1-1/2 tbsp oil
  • 1/2 tbsp ginger garlic paste

Method:

  • Cut the egg plant in 1/4 inch thickness round discs.
  • Put them in a large bowl and add the dry masala's stated above, oil, ginger garlic paste.
  • Cover the bowl with a lid and shake it so all the ingredients mix and egg plant gets coated well.


  • Once done let it rest for 1 hour (marination).
  • Preheat the oven at 180 C and line a baking tray with Parchment paper.
  • Place the marinated egg plant discs on the baking tray and spray some olive oil. (optional)
  • Bake for 30 minutes.Once done take the egg plant out of the oven and let them cool slightly. Baked eggplant is now ready to be served🙂
