Recipe:

Ingredients:
- 1 cup small Sabudana (170 grams)
- 1/2 cup sugar (100 gm)
- 1/4 tsp cardamom powder
- 2 tbsp roasted cashews (chopped)
- Orange food color (optional)
- Pistachios for garnish
Method:
- Wash and Soak the sabudana for 4-5 hours in water. The level of water should be at-least 1/2 inch above the sabudana.
- Heat a pan and add 1 tbsp ghee. Add the soaked sabudana and cook them until transparent.
- Stir continuously and add the sugar.
- Now add the orange food color (optional), cardamom powder and chopped cashews.
- Stir continuously till the mixture forms a lump and starts leaving the sides of the pan.
- Switch off the flame and take out the mixture in a plate.
- Let it cool down a bit (not completely).
- Once the mixture is little cold grease your hands and shape them as laddus and garnish with chopped pistachios.
Notes:
- The hot mixture can as it is be served as halwa or you can set it in a plate make barfi also.
- The quantity of sugar can be increased or decreased as per taste.
