Strawberry Mini Cheese Cakes

Ingredients:

  • 7-8 Digestive Biscuits
  • 3 tbsp melted Butter
  • 200 grams Cream Cheese (at room temperature)
  • 1/4 Cup Whipping Cream (chilled)
  • 2 tbsp Powdered Sugar
  • 1/4 Cup Chopped Strawberries
  • 1 tbsp Strawberry Jam
  • 1 drop Pink gel food Color (optional)

Method:

  • Take the digestive biscuits and grind them to a powder.
  • Add the melted butter and mix well.
  • Take a muffin/cupcake tray and place the paper liners in it.
  • Fill the cupcake/muffin liners with the digestive biscuit and butter mixture till it covers 1/4 of the liner.
  • Place the tray in the freezer .
  • Now, take room temperature cream cheese and soften it using spatula. Add the sugar and mix.
  • Now add chilled whipped cream and beat using a whisker or hand mixer till the mixture is smooth and silky.
  • Now, add the chopped strawberries and strawberry jam.
  • Mix everything well.
  • Add the cream mixture to the muffin/cupcake tray placed in the freezer.
  • Smoothen using a spatula and place the tray into the freezer for 2 hours.
  • Take out from the freezer and remove the liners. 
  • Garnish with strawberries cut in heart shape using cookie cutter. Enjoy!
