Bow-Tie (Farfalle) Pasta with Fresh Tomato and Herbs Sauce

Ingredients:

  • 1-1/2 cup bow-tie pasta
  • 3 tsp olive oil(divided)
  • 2 tsp salt(divided)
  • 1/4 cup pasta cheese
  • 6 cups water
  • 4-5 garlic pods
  • 1 onion chopped
  • 2-3 red tomatoes
  • 1tsp dried oregano
  • 1 tsp fresh basil leaves (dried can also be used)

Method:

  • Boil water in a pan. Cook pasta with salt and olive oil in it till al dente (partially cooked) or as per the instructions on the packet.
  • Drain the cooked pasta with help of a strainer. Set them aside. 
  • Meanwhile boil some water in a pan, take 2-3 tomatoes and make cut like X at the base and blanch the tomatoes till the peels come out easily.
  • Now take another pan, heat it on low flame and add 4-5 grated garlic pods and saute for a minute.Now add chopped onion and saute.
  • Once the tomatoes are blanched , let them cool for sometime and blend them to form a puree.
  • add the pureed tomatoes to the garlic an onion and cook.
  • Add the dried herbs and chopped fresh basil leaves. 
  • Now add the cooked pasta to the sauce and mix well.
  • Serve the hot pasta garnished with herbs and cheese.
