Ingredients:
- 1-1/2 cup bow-tie pasta
- 3 tsp olive oil(divided)
- 2 tsp salt(divided)
- 1/4 cup pasta cheese
- 6 cups water
- 4-5 garlic pods
- 1 onion chopped
- 2-3 red tomatoes
- 1tsp dried oregano
- 1 tsp fresh basil leaves (dried can also be used)
Method:
- Boil water in a pan. Cook pasta with salt and olive oil in it till al dente (partially cooked) or as per the instructions on the packet.
- Drain the cooked pasta with help of a strainer. Set them aside.
- Meanwhile boil some water in a pan, take 2-3 tomatoes and make cut like X at the base and blanch the tomatoes till the peels come out easily.
- Now take another pan, heat it on low flame and add 4-5 grated garlic pods and saute for a minute.Now add chopped onion and saute.
- Once the tomatoes are blanched , let them cool for sometime and blend them to form a puree.
- add the pureed tomatoes to the garlic an onion and cook.
- Add the dried herbs and chopped fresh basil leaves.
- Now add the cooked pasta to the sauce and mix well.
- Serve the hot pasta garnished with herbs and cheese.
