Eggless Vanilla Tutti Frutti Muffins

Ingredients:

  • 1 cup All Purpose Flour
  • 1/4 cup Yogurt
  • 1/4 cup Milk
  • 1/4 cup Vegetable oil
  • 1/2 cup Powdered Sugar
  • 1/2 tsp Vanilla Essence
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 3-4 tbsp Tutti Frutti

Method:

  • Take a large bowl and add yogurt and oil and mix well using a whisker.
  • Now add the powdered sugar and mix.
  • Take a sieve and place it on the bowl and add flour, baking soda, baking powder and sift.
  • Mix everything well using spatula.
  • Do not overmix.
  • Now take tutti frutti and coat it with little flour.
  • This prevents them from sinking during baking.
  • For Oven method
    • Preheat the Oven at 180 C.
    • Take a muffin pan and line it with paper liners. Pour the batter using a ice cream scoop and fill the liners 3/4 of the capacity.
    • Sprinkle tutti frutti and place a piece of cherry in the center.
    • Tap the tray  2-3 time to get rid of any air.
    • Bake for 20-25 minutes or till a skewer inserted comes out clean.
  • For Stove Top method
    • Preheat a vessel for 5 minutes.
    • Grease the foil liners and pour the batter in it.
    • Sprinkle tutti frutti and place a cherry in the center. Tap the tray 2-3 times to get rid of any air.
    • Place a trivet and a plate on it. Place the muffins/cupcake liners on it.
    • Cover the pan and close the vent on the lid with paper.
    • Bake for 20-25 minutes on low to medium heat or till a skewer inserted comes out clean.
  • Your soft and spongy Vanilla tutti frutti muffins are ready.
