Ingredients:
- 1 cup All Purpose Flour
- 1/4 cup Yogurt
- 1/4 cup Milk
- 1/4 cup Vegetable oil
- 1/2 cup Powdered Sugar
- 1/2 tsp Vanilla Essence
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 3-4 tbsp Tutti Frutti
Method:
- Take a large bowl and add yogurt and oil and mix well using a whisker.
- Now add the powdered sugar and mix.
- Take a sieve and place it on the bowl and add flour, baking soda, baking powder and sift.
- Mix everything well using spatula.
- Do not overmix.
- Now take tutti frutti and coat it with little flour.
- This prevents them from sinking during baking.
- For Oven method
- Preheat the Oven at 180 C.
- Take a muffin pan and line it with paper liners. Pour the batter using a ice cream scoop and fill the liners 3/4 of the capacity.
- Sprinkle tutti frutti and place a piece of cherry in the center.
- Tap the tray 2-3 time to get rid of any air.
- Bake for 20-25 minutes or till a skewer inserted comes out clean.
- For Stove Top method
- Preheat a vessel for 5 minutes.
- Grease the foil liners and pour the batter in it.
- Sprinkle tutti frutti and place a cherry in the center. Tap the tray 2-3 times to get rid of any air.
- Place a trivet and a plate on it. Place the muffins/cupcake liners on it.
- Cover the pan and close the vent on the lid with paper.
- Bake for 20-25 minutes on low to medium heat or till a skewer inserted comes out clean.
- Your soft and spongy Vanilla tutti frutti muffins are ready.
