Ingredients:
- 3-4 medium potatoes boiled and mashed
- 1 cup cooked vegetable pulav (plain rice can also be used)
- 1/2 tsp turmeric powder
- 1/2 tsp kashmiri red chili powder
- 1/2 roasted cumin seeds
- 1/2 tsp dry mango powder
- 1/2 chat masala
- 1/4 tsp garam masala
- 1/4 tsp carom seeds
- 1/2 inch grated ginger
- 1 cup bread crumbs (for dough and coating)
- Optional 1/2 cup chopped onions, carrots & beans(if using plain rice)
Method:
- Grind the vegetable pulav in a mixer jar.
- Take a large mixing bowl and add pulav and mashed potatoes.
- Now add all the dry ingredients and mix well.
- Add the bread crumbs and form a dough. Adjust the quantity of the bread crumbs depending upon how wet your mixture is. See the picture for the dough consistency.
- Make lemon size balls and flatten them using your palm into round discs.
- Roll the cutlets in the bread crumbs taken separately in a plate and coat them well.
- Now take a frying pan and add oil for shallow frying and let it heat on medium flame.
- Place the cutlets in the pan one by one and shallow fry them till they are golden brown.
- Drain the cutlets on a absorbant paper/paper towel to soak excess oil.
- Your leftover rice/vegetable pulav cutlets are ready to be served with coriander mint chutney or any dip of your choice.
