Leftover Rice/Vegetable Pulav Cutlets

Ingredients:

  • 3-4 medium potatoes boiled and mashed
  • 1 cup cooked vegetable pulav (plain rice can also be used)
  • 1/2 tsp turmeric powder
  • 1/2 tsp kashmiri red chili powder
  • 1/2 roasted cumin seeds
  • 1/2 tsp dry mango powder
  • 1/2 chat masala
  • 1/4 tsp garam masala
  • 1/4 tsp carom seeds
  • 1/2 inch grated ginger
  • 1 cup bread crumbs (for dough and coating)
  • Optional 1/2 cup chopped onions, carrots & beans(if using plain rice)

Method:

  • Grind the vegetable pulav in a mixer jar.
  • Take a large mixing bowl and add pulav and mashed potatoes. 
  • Now add all the dry ingredients and mix well. 
  • Add the bread crumbs and form a dough. Adjust the quantity of the bread crumbs depending upon how wet your mixture is. See the picture for the dough consistency.
  • Make lemon size balls and flatten them using your palm into round discs. 

  • Roll the cutlets in the bread crumbs taken separately in a plate and coat them well.
  • Now take a frying pan and add oil for shallow frying and let it heat on medium flame.
  • Place the cutlets in the pan one by one and shallow fry them till they are golden brown.

  • Drain the cutlets on a absorbant paper/paper towel to soak excess oil.
  • Your leftover rice/vegetable pulav cutlets are ready to be served with coriander mint chutney or any dip of your choice.
