Ingredients:
- 250 grams All purpose flour (approx 1 3/4 cup)
- 180 grams room temperature unsalted Butter
- 100 grams Powdered sugar (varies according to taste)
- 4 tbsp Cornstarch
- 2 tbsp Milk
- 1 tsp Vanilla essence
- 20 grams Almond flour
- 1/4 tsp Almond essence(optional)
- 20 grams cocoa powder
- 1/2 tsp salt (skip if using salted butter
- White chocolate
Method:
- Other Cookies:
- Beat the butter using a hand blender/whisk till it turns pale and creamy.
- Now add sugar and mix it well.
- Add the vanilla essence, almond essence and milk to it and mix.
- In another bowl sieve the flour, cornstarch, salt (only if using unsalted butter) and almond flour to avoid any lumps.
- Add the dry ingredients to the butter sugar mixture in batches to combine well and form a dough.
- Adjust the the consistency of the the dough by adding more flour or milk (starting with 1/2 tsp of milk at a time).
- The dough should not stick to your hands and neither should it be crumbly.
- Divide the dough into 2 parts
- Add 20 grams of cocoa powder and 1 tbsp sugar to one part (adjust the consistency by adding little milk if you feel the dough is too dry).
- Now take each dough one by one and put it between two parchment papers and roll it using a rolling pin into 5 mm thickness.
- Place the rolled dough as it is in the refrigerator for at-least an hour.
- For rectangle cookies with heart
- Take the plain as well as the chocolate dough.
- Taking one by one cut each color dough in rectangle shape using a cookie cutter or any rectangular lid. Cut a heart shape in the center of the rectangle cookies using a cookie cutter.
- Remove the hearts to form a cavity.
- Now place the plain cookie color heart in the chocolate rectangle and the chocolate heart in the plain dough rectangle cavity.
- Place on the refrigerator till the time of baking.
- For the round chocolate cookies
- Cut all in circle shape. Make a small circle in the center using a cookie cutter for filling.
- Place it in the refrigerator till the time of baking.
- For the check board cookies
- With the remaining plain and chocolate dough make them in two square logs of each color.
- Take the plain log and place a chocolate log next to it.
- Now take the remaining two logs and place the chocolate log on top of the plain log and place the plain log on the chocolate log to make it look like a check board.
- Cling wrap the log and place it in refrigerator till the time of baking.
- Bake all the cookies in a preheated Oven at 170 C for 15 minutes.
- Let the cookies cool down on a wire rack.
- For chocolate filling microwave the white chocolate till its smooth and flowy.
- Take the circular cookie and spread white chocolate on it.Then Place the cookie with hole in the center on it.
- Fill more white chocolate if required.
Handy tips
- You can use your creativity to make and shape of cookie you like.
- If you feel the dough is sticky even after refrigeration add little flour and knead well.(adjust sugar accordingly)
