Ingredients:
- 1 Cup Sesame(Til) 130 gms
- 1 Cup Jaggery (Gud) 250Gms-finely chopped
- 1 Cup Roasted Peanuts (Mungfali)140 gms
- 1 tbsp Clarified butter (Ghee)
Method:
- Dry roast the Sesame for 3-4 minutes on low to medium flame, stirring continuously.
- The Sesame start popping. Remove from flame and transfer to a plate to cool down
- Once cooled set aside 3-4 tbsp sesame in bowl and pulse the remaining in a grinder with 2-3 seconds interval.
- Make sure you don't grind it for longer duration otherwise instead of powder the Sesame will leave its oil and become a paste.
- Now take some roasted peanuts and pulse them the same as Sesame.
- Heat a non stick pan and add ghee to it.
- Add the finely chopped jaggery and keep the flame low to medium.
- Cook the jaggery till it becomes frothy.
- Keep stirring continuously.
- Test if the Jaggery is ready by pouring little in cold water. If the jaggery forms a ball easily or is brittle, switch off the flame.
- Otherwise continue cooking till it reaches this stage.
- Once done add the powdered Sesame, peanuts and the whole sesame seeds that we kept aside earlier.
- Stir quickly and mix everything well.
- Transfer this mixture to a parchment and using your hands make it to a rectangular or square shape.
- Place a plastic sheet over it and roll using a rolling pin to 1 cm thickness when it's still warm.
- Cut in the desired shape when it's still warm.
- Let it set for 20 minutes.
- Enjoy the healthy and tasty Sesame Peanut and Jaggery Brittle.
