Cajun Potatoes - Barbeque Nation Style

Ingredients:

  • 15 baby potatoes
  • Oil for shallow frying
  • For slurry:
    • 3 tbsp all purpose flour
    • 3 tbsp corn flour
    • 1/2 tsp dried Oregano
    • 1/4 tsp salt
    • Water as needed
  • For Mayo sauce
    • 3/4 cup Mayonnaise
    • 4 tbsp milk
    • 1/4 tsp dried oregano
    • 1/4 tsp dried basil
    • 1/8 tsp chili flakes
    • 1 tsp garlic powder
    • 1/2 tsp onion powder
    • 1/2 tsp red chili powder
    • 1/2 tbsp tomato ketchup
    • Black Pepper - as per taste

Method:

  • Boil baby potatoes in microwave for 8 minutes or in a pressure cooker for 2 whistles.
  • Once boiled without removing the skin press and make them flat using a spoon or your palm.
  • Now make the slurry by adding cornstarch, all purpose flour, dried oregano and dried basil and water.
  • Heat a pan and add oil to it.
  • Dip the boiled and pressed potatoes in the slurry and shallow fry them till they are golden brown.
  • Making the Mayonnaise sauce
  • In a bowl add the ingredients mentioned for mayo sauce and mix well to make a medium consistency paste.
  • Place the shallow fried potatoes in a serving dish and pour the mayo sauce on it.
  • Garnish with chopped coriander, onions and red chili powder.
  • Your cajun potatoes are ready to be served.
