Ingredients:
- Ingredients for Samosa dough
- 2 cups All purpose flour (250 grams) (Maida)
- 1/2 tsp carrom seeds (aijwain)
- 1/4 cup oil (50 ml)
- 1/2 tsp salt (or as per taste)
- Water as required
- Ingredients for stuffing
- 5 potatoes boiled & mashed (400 grams) (aloo)
- 1/4 cup peas boiled (matar)
- 1 tsp Ginger- grated (adrak)
- 2 Green Chilli-finely chopped (hari mirch)
- 1/2 tsp Roasted cumin (jeera)
- 1/2 tsp Coriander seeds(sabut dhaniya)
- Salt as per taste
- 1 tbsp oil
- 1/2 tsp Dry mango powder (amchoor)
- 1/2 tsp Garam masala
- 1/2 tsp Red chili powder
Method:
- Method for dough
- Take a large bowl and add the flour to it.
- Crush the carrom seeds between you palms and add to the flour.Add the salt and mix.
- Now add the oil and mix using your hands so that the oil incorporates well with he flour.
- Now add water gradually and form a stiff dough.
- Cover the dough and let it rest for 15 minutes.
- Method for stuffing
- Heat a pan and add oil to it.
- Add the grated ginger and chopped greens chili and saute.
- Add the peas and roasted cumin and coriander seeds crushed between your palms.
- Mix everything well.
- Now add the boiled and mashed potatoes and mix well.
- Now add the red chili powder, dry mango powder and garam masala and mix well.
- Cook this mixture for 2-3 minutes.
- Add chopped coriander and mix.
- Switch off the flame and let the mixture cool down.
- Assembling of Ring samosa
- Pinch a ball of dough and roll it thin using a rolling pin.
- Cut the sides to make the rolled dough into a rectangle shape.
- Take little samosa filling and and place it on one end of the rectangle. Fold the dough so the filling is covered.
- Now make long cuts using a knife at the other end.
- Make sure to cut till just half inch before the other end.(watch video for clarity)
- Roll the cylinder and make it to a round.
- Seal using water and leftover rolled dough.
- Let the ring samosa rest for at least half an hour.
- For frying heat oil in a pan. Make sure that the oil is not very hot.
- To test if oil is at perfect temperature drop a piece of dough in the oil. It should not come up instantly but gradually.
- Drop the ring samosa in low heated oil.
- Fry the samosa on low flame for 5-6 minutes and do not touch them.
- Flip the samosas and turn the flame to low to medium and fry them till brown.
- Fry all the other samosas likewise.
- Drain them on a kitchen paper and serve with sweet tamarind chutney or coriander mint chutney.
