Pumpkin Shaped Sugar Cookies - Eggless

Ingredients:

  • 250 grams All purpose flour (approx 1 3/4 cup)
  • 180 grams room temperature unsalted Butter
  • 100 grams Powdered sugar (varies according to taste)
  • 4 tbsp Cornstarch
  • 2 tbsp Milk
  • 1 tsp Vanilla essence
  • 1/2 tsp salt (skip if using salted butter)
  • Few drops of (red + yellow) orange and green gel food color
  • Melted semi sweet chocolate

Method:

  • Beat the butter and sugar using a hand blender/whisk till they turns pale and creamy.
  • Place a sieve over the butter sugar mixture bowl.
  • Add the dry ingredients (flour, corn starch and salt) to the butter sugar mixture in batches.
  • Add the vanilla essence.
  • Combine the dough using hands.
  • Do not knead just bring the mixture together to form a dough.
  • Adjust the the consistency of the the dough by adding more flour or milk (starting with 1/2 tsp of milk at a time).
  • The dough should not stick to your hands and neither should it be crumbly.
  • Divide the dough into 2 parts in the ratio of 80:20
  • Color the big dough ball in orange color and the small one in green color.
  • Now take each dough one by one and put it between two parchment papers and roll it using a rolling pin into 5 mm thickness.
  • Place the rolled dough as it is in the refrigerator for at-least half hour.
  • Take the dough out of the refrigerator and using a round bottle lid cut the dough in circles.
  • Now using index finger and thumb push the dough from top and bottom to shape it like pumpkin. (Watch video for clarity)
  • Take the green dough and cut small rectangles.
  • Place the green rectangles on the orange cookie to make the stem of pumpkin. (Watch video for clarity)
  • Now using a knife make impressions  to make the cookie look like a pumpkin.
  • Place the cookie in the refrigerator for another half hour.
  • After that bake them in a preheated oven at 170C for 15 minutes.
  • Let the cookies cool on a wire rack.
  • Melt the semi sweet chocolate and fill in a piping bag.
  • Pipe the shape of Jack-o-lantern.
