Ingredients:

  • Watermelon rinds (depending on the size you have)
  • 3-4 cup water (or as required)
  • 2 cups sugar 
  • 1 tsp vanilla essence
  • Gel food color (I used red, blue, green and orange)

Method:

  • Take the white part of the Watermelon rind and chop them into small pieces. (Refer the picture below for size clarity)
  • Boil water in a pan and add the cut Watermelon rinds to it and boil them for 10 minutes or till they turn translucent.
  • Drain the pieces and now in the same pan put water and sugar and give it a boil.Once the water starts boiling add the watermelon rinds in the sugar syrup and boil for another 10 minutes. Now add the vanilla essence and mix well.
  • When done divide the sweetened pieces into four bowls and add the food colors of your choice. (I used gel food colors red, green, orange and blue)
  • Mix well and let them rest for at-least 4-5 hours.
  • Now with the help of a seive or a thick paper tissue drain/dry the excess sugar syrup and let the sweetened tutti frutti lie on a flat surface separately.
  • Dry them in open for a day. Now store the tutti frutti in an air tight container. Place the tutti frutti in refrigerator for increased shelf life.
