Chocolate Chip Cookies Eggless

The irresistible chocolate chip cookies with crunchy edges, soft and gooey center. The best one that you've ever had.🙂

Ingredients:

  • 1-1/4 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt (skip if using salted butter)
  • 1 tbsp cornstarch
  • 1/2 cup (115 grams) butter 
  • 1/2 cup (100 grams) fine granulated sugar
  • 1/2 cup (100 grams) brown castor sugar (I used the dark brown one)
  • 1/4 cup greek yogurt (normal yogurt can also be used)
  • 1 tsp vanilla essence
  • 1 cup chocolate chips/chunks
  • 1 cup chopped walnuts/pecans

Method:

  • Take butter and both types of sugar in a large bowl and cream it together using a whisk or spatula.
  • Add the vanilla essence and yogurt and whisk well.
  • Sift the dry ingredients (flour, baking soda and cornstarch) using a seive and mix them with the butter sugar mixture and stir until blended.
  • Stir in the chocolate chips/chunks and walnuts. And mix it well.
  • The mixture should come together to become a dough. Do not knead.

  • Place the dough in the refrigerator for at-least an hour.
  • Once chilled scoop 2 tbsp dough, form it into a ball and place it on a baking tray lined with parchment paper.
  • Place the baking tray in middle rack of a preheated oven @160 C for 18-20 minutes or until browned around the edges.
  • Take the cookies out once baked and let them cool for 15 minutes.
  • Now gently pick them up and place on a wired rack for further cooling.
  • Enjoy you chocolate chip cookies.


Notes:

  • Brown castor sugar can be replaced with regular sugar. Although using brown sugar is recommended for a perfect texture.
  • The temperature and time required differs in every oven so make sure you keep a check on the cookies.
  • I have used dark brown castor sugar which makes the cookies further chewy.If you do not like the chewy texture in cookies then fine granulated sugar should be used instead of castor sugar for crisper ones.
