Ingredients:
- 250 grams All purpose flour (2 Cups)
- 175 grams room temperature unsalted Butter
- 100 grams Powdered sugar (varies according to taste)
- 4 tbsp Cornstarch
- 1 tsp Vanilla essence
- 1/2 tsp salt (skip if using salted butter)
- 1 Cup White Chocolate finely chopped
- 1/2 Cup dark chocolate chips
- Colorful Sprinkles
Method:
- Beat the butter and sugar using a hand blender/whisk till it turns pale and creamy.
- Add the vanilla essence
- Place a sieve over the butter sugar mixture bowl.
- Add the dry ingredients(flour, corn starch and salt) to the butter sugar mixture.
- Combine the dough using a spatula and then use hands. Do not knead just bring the mixture together to form a dough.
- Adjust the the consistency of the the dough by adding more flour or milk (starting with 1/2 tsp of milk at a time).
- The dough should not stick to your hands and neither should it be crumbly.
- Divide the dough into 2 parts.
- Now take each dough one by one and put it between two parchment papers and roll it using a rolling pin into 5 mm thickness.
- Place the rolled dough as it is in the refrigerator for at-least half hour.
- Take the dough out of the refrigerator and cut into circles and Christmas tree shape using cookie cutters
- Place the cookies in the refrigerator for another half hour.
- After that bake them in a preheated oven at 170C for 15 minutes or until the sides start turning golden brown.
- Let the cookies cool down on a wire rack.
- Take white chocolate and chop finely.
- Melt in the microwave in 30 second interval or using the double boiler method.
- Once the cookies are cool, dip one by one in the melted white chocolate and set them aside for the chocolate to harden.
- Once the white chocolate hardens melt the dark chocolate in the microwave in 30 seconds interval or using double boiler method.
- Fill it in piping bag or any zip lock bag.
- Now make strings for Christmas lights on the cookies.( refer video on YouTube)
- Stick the colorful sprinkles on the chocolate strings and let the chocolate harden.
- Serve the colorful Christmas lights Cookies and enjoy the festive time with family and friends.
