GRANOLA BARS

Ingredients:

  • 1/2 Cup Pumpkin Seeds
  • 1/2 cup Sunflower Seeds
  • 2 tbsp Flax Seeds
  • 2 cups Rolled Oats
  • 1 cup Dates (deseeded)
  • 1/2 cup Honey
  • 1/2 cup dried Cranberries
  • 1/2 cup Raisins
  • 1/4 tsp Cinnamon powder (optional)
  • 1/8 tsp Salt
  • 1/8 cup Walnuts
  • 1/4 cup Cashews
  • 1/4 cup Almonds

Method:

  • Roast 2 cups rolled oats on low to medium flame for 5 minutes.
  • Remove from flame and set aside. In the same pan add the pumpkin seeds, sunflower seeds and flax seeds. Roast them for 5 minutes on low to medium flame.
  • Remove from heat and set aside.
  • In the same pan add roughly chopped almonds, cashews and walnuts and roast for 5 minutes on low flame. Remove from heat and set aside.
  • Let the dry ingredients cool down.
  • Take seedless dates and chop them. Add to a mixer grinder and make a paste.
  • Heat ghee in a pan and add the dates paste to it.
  • Cook for 3-4 minutes on low to medium flame stirring continuously.
  • Add the dates paste to the nuts, seeds and oats mixture.
  • Mix well and add raisins, cranberries  and honey.
  • Mix well and add cinnamon powder,  salt and honey.
  • Combine everything well.
  • Take a flat tray and place parchment paper on it.
  • Spread the granola mixture and flatten using a spatula.
  • Spread some dried cranberries and flatten with spatula.
  • Place in the refrigerator for 2 hours and then cut in the desired shape.
  • I've  cut the bars in rectangular shape.
