Mini Fruit Tarts

    Description: These adorable fruit tarts are perfect for get together and celebrations. They are easy to serve, bite size and no mess delicacies. For the toppings the sky is the limit and you can choose any fruit depending upon the season. The crusts can be made ahead of time and filled with whipped cream and topped with your favorite fruits. I love berries on them for sure. ❤

Ingredients:

  • For the tarts
    • 125 grams All purpose flour (approx 1  cup)
    • 100  grams room temperature unsalted Butter
    • 50 grams Powdered sugar (varies according to taste)
    • 1.5  tbsp Cornstarch
    • 1 tbsp Milk
    • 1/2 tsp Vanilla essence
    • Few drops of pink gel food color
    • 10 grams Almond flour
    • 1/8 tsp Almond essence(optional)
  • For the Filling
    • 1/2 cup whipping cream
    • 1/2 cup cream cheese
    • 2 tbsp powdered sugar
    • 1 tsp vanilla essence

Method:

  • Use a hand blender/whisk to beat the butter till it turns pale and creamy.
  • Now add sugar and mix it well.
  • Add the vanilla essence, almond essence, few drops of pink gel food color and milk to it and mix.
  • In another bowl sieve the flour, cornstarch, salt (only if using unsalted butter) and almond flour to avoid any lumps.
  • Add the dry ingredients to the butter sugar mixture in batches to combine well and form a dough.
  • Adjust the the consistency of the the dough by adding more flour or milk (starting with 1/2 tsp of milk at a time).
  • The dough should not stick to your hands and neither should it be crumbly.
  • Now, take the dough and put it between two parchment papers and roll it using a rolling pin.
  • Place the rolled dough as it is in the refrigerator for at-least an hour.
  • Take out the rolled dough and using a flower shape  cookie cutter make flower shapes.
  • Take a muffin mould  and grease it generously with butter.
  • Place the flower shaped dough in each cavity and press gently to let it take the shape of the mould. It will look like a little flower shaped basket.
  • Bake in a preheated oven at 170 C for 15 minutes.
  • Once done take the tarts out of the oven and let them sit for 10 minutes and later transfer them to a wired rack for cooling completely.
  • Prepare the filling by that time.
  • Take heavy whipping cream, cream cheese, sugar and vanilla essence and whip it till stiff peaks.
  • Fill the tarts using a piping bag or a spoon with the cream filling.
  • Refrigerate till serving.
  • Before serving top them with your favorite fruits or whatever is available at your home.
  • Here I've used blueberries, strawberries and kiwi.
