Baked/Steam Yogurt or Bhapa Doi

Ingredients:

  • 1 cup Thick Yogurt (250 grams)
  • 1/2 cup Sweetened Condensed Milk (150 grams)
  • 1/4 tsp Cardamom Powder
  • 2 tbsp Hot Milk (30 ml)
  • Few Strands of Saffron
  • Few Chopped Pistachios
  • Water as required

Method:

  • In a bowl mix the hot milk and saffron strands. Set aside.
  • Take a large bowl and add the thick yogurt, condensed milk, cardamom powder and pistachios and whisk well to combine everything.
  • Make sure there are no lumps left in the yogurt.
  • Now, add the saffron soaked milk and mix well.
  • Pour the mixture in ramekins (any oven proof bowls),
  • Meanwhile, preheat the Oven at 180 C.
  • Furthermore, take a baking tray and place the ramekins in it at a little distance with each other.
  • Now, pour water in the tray till the ramekins are 1/2 immersed in it.
  • Place the tray in the Oven and bake for 25 to 30 minutes.
  • Keep a check after 20 minutes to avoid browning of the top.
  • Remove the tray from oven once baked and  garnish with chopped pistachios and saffron strands.
  • Let the ramekins cool down a little and place them in the refrigerator for at least 2-3 hours.
  • Enjoy your delicious baked yogurt.
