Christmas Lights Eggless Sugar Cookies

Ingredients:

  • 250 grams All purpose flour (2 Cups)
  • 175 grams room temperature unsalted Butter
  • 100 grams Powdered sugar (varies according to taste)
  • 4 tbsp Cornstarch
  • 1 tsp Vanilla essence
  • 1/2 tsp salt (skip if using salted butter) 
  • 1 Cup White Chocolate finely chopped
  • 1/2 Cup dark chocolate chips
  • Colorful Sprinkles  

Method:

  • Beat the butter and sugar using a hand blender/whisk till it turns pale and creamy.
  • Add the vanilla essence
  • Place a sieve over the butter sugar mixture bowl.
  • Add the dry ingredients(flour, corn starch and salt) to the butter sugar mixture.
  • Combine the dough using a spatula and then use hands. Do not knead just bring the mixture together to form a dough.
  • Adjust the the consistency of the the dough by adding more flour or milk (starting with 1/2 tsp of milk at a time).
  • The dough should not stick to your hands and neither should it be crumbly.
  • Divide the dough into 2 parts.
  • Now take each dough one by one and put it between two parchment papers and roll it using a rolling pin into 5 mm thickness.
  • Place the rolled dough as it is in the refrigerator for at-least half hour.
  • Take the  dough out of the refrigerator and cut into circles and Christmas tree shape using  cookie cutters 
  • Place the cookies in the refrigerator for another half hour.
  • After that bake them in a preheated oven at 170C for 15 minutes or until the sides start turning golden brown.
  • Let the cookies cool down on a wire rack.
  • Take white chocolate and  chop finely. 
  • Melt in the microwave in 30 second interval or using the double boiler method.
  • Once the cookies are  cool, dip one by one in the melted white  chocolate and set them aside for the chocolate to harden.
  • Once the white  chocolate hardens melt the dark chocolate in the microwave in 30 seconds interval or using double boiler method.
  • Fill it in piping bag or any zip lock bag.
  • Now make strings for Christmas lights on the cookies.( refer video on YouTube)
  • Stick the colorful  sprinkles on the chocolate strings and let the chocolate harden.
  • Serve the colorful Christmas lights Cookies and enjoy the festive time with family and friends.
