Strawberry Cake - Eggless

Ingredients:

  • 1-1/2 cup (225 grams) all purpose flour
  • 1/2 tsp baking soda
  • 1 cup yogurt
  • 3/4 (150 grams) cup sugar 
  • 1 tsp baking powder
  • 1/3 cup milk
  • 1 tbsp lemon juice
  • 1 tsp vanilla essence
  • 1 cup strawberries cut to pieces (few cut vertically for decoration)

Method:

  • Take a wide bottomed bowl and add yogurt and baking soda to it.
  • Let it sit for 5 minutes the yogurt will become frothy.
  • Add the sugar to yogurt and soda mixture.
  • Add vanilla essence.
  • Now sift the all purpose flour and baking powder using a sieve.
  • Mix using the cut and fold method.
  • Add lemon juice.
  • Now add the chopped strawberries to the batter and gently mix them.
  • Pour the batter in a spring form pan lined with parchment paper.
  • Tab to remove any air bubbles.
  • Now arrange the strawberry pieces on the battery to make a pattern as shown in the picture.

  • Bake the cake in a preheated oven at 180 C for 30-35 minutes.
  • Check whether the cake is cooked or not by inserting a skewer and it should come out clean.
  • Your strawberry cake is ready to be served.


Note: Since, every oven is different and the temperature varies, do keep a check.
