Paneer Vegetable Quesadilla

Ingredients:

  • 1/4 cup onion(half medium size)finely chopped
  • 1/4 cup coloured Capcicum (red+green)finely chopped
  • 1/4 cup tomato deseeded(half medium)finely chopped
  • 1/4 cup sweet corn mashed
  • 1/2 cup paneer finely diced
  • 2 tbsp oil
  • 1/4 tsp turmeric
  • 1/2 tsp kashmiri red chili powder
  • 1/2 tsp chaat masala
  • Mozzarella cheese as required
  • Tomato ketchup as required
  • Salt as per taste
  • 2 tortillas (large size)

Method:

  • Heat a pan and add oil to it.
  • Add chopped onion and capsicum and saute for 2 minutes.
  • Add mashed corn and tomato and saute.
  • Now add the turmeric powder, salt and red chili powder and mix.
  • Add the diced paneer and chaat masala.
  • Lower the flame and cover the pan with lid for a minute.
  • Switch off the flame.
  • Now take a tortilla and apply tomato ketchup.
  • Place the filling on half side of the tortilla and put mozzarella cheese on it. Fold it to make a semicircle.
  • Place the tortilla on a sandwich grill and apply butter on both sides.

  • Grill till it is golden in color.
  • Cut slices using pizza cutter and serve with your favorite dip.
