Ingredients:
- 3 Carrots (80 grams grated)
- 2 cups Milk
- 1/2 Cup Sugar (adjust as per taste)
- 1/4 Cup Cashews
- 1 1/5 tsp Agar Agar Powder
- 1 tbsp Cornstarch/Corn flour
- 1/4 cup milk powder
- 1/4 tsp Cardamom Powder
- Few drops of orange food color (optional)
- Chopped pistachios and dried rose petals for garnish (optional)
Method:
- Grate the carrots.
- Add 2 Cups Milk and the grated carrots to a pan and place it on heat.
- Add the cashews and bring the mixture to boil.
- Let it boil till the cashews and carrot turn tender.
- Switch off the flame and let the mixture cool down.
- Once cooled blend the mixture in a grinding jar.
- After blending add Agar Agar Powder, Milk powder, cornstarch and Sugar.
- Mix well using a whisk making sure there are no more lumps.
- Now place the Pan on heat and let the mixture thicken stirring continuously.
- Grease a 7 inch container and pour the mixture into it.
- Garnish with chopped pistachios and dried rose petals.
- Place in the refrigerator for at least 3-4 hours.
- Once set cut in shape of your choice and serve.
