Description: The most common and quick-easy breakfast in Indian homes is the kanda (onion) batata (potato) poha.
It keeps you full for a long time and can be easily carried to school or office in your dabba (tiffin box) 🙂

Ingredients:

  • 3 cups poha (medium rice flakes)
  • 2 tbsp vegetable oil
  • 4-5 curry leaves
  • 1 tsp mustard seeds
  • 2 tbsp roasted peanuts
  • 1 1/4 tsp turmeric powder
  • 1 tsp sugar
  • 1 tsp lemon juice
  • 1 green chili - finely chopped
  • 1 small onion - finely chopped
  • 1 small potato - finely diced
  • 2 tbsp fresh coriander leaves - finely chopped
  • Salt as per taste

Method:

  • Wash the rice flakes under running water in a colander till they are soft. (make sure they don't turn mushy)
  • After draining all the water out, add 1 tsp turmeric powder, 1 tsp sugar and salt as per taste. Set them aside.
  • Now take a pan/wok and add 2 tbsp oil and let it heat on medium flame.
  • Once the oil is hot put the mustard seeds and let them crackle.
  • Now add the curry leaves and green chili, saute them for a minute and add the chopped onions and potatoes.
  • Add 1/4 tsp turmeric powder and little salt (don't forget you have already put salt in the washed poha, this is just for the potatoes and onions) and cover the pan for 3-4 minutes on low flame.
  • Open the lid and add roasted peanuts. Stir well and add the poha to the pan.
  • Mix them gently so that the onions-potatoes blend well with the poha. Add lemon juice and mix well.
  • Cover the pan for another 3-4 minutes on low flame and when done garnish with fresh coriander.
