Ingredients:
- 1/2 cup (100 gms ) sooji (semolina)
- 1/3 cup (90 ml) ghee or clarified butter
- 1/3 cup (80 gms) sugar
- 8-10 Raisins
- 8-10 Cashews - chopped
- 8-10 Almonds - chopped
- 1 tsp green cardamom powder
- Saffron strands (a few)
- 1 cup (200 ml) water
- 1/2 cup (100 ml) milk
Method:
- Put 1/3 cup ghee or clarified butter in the pan and place it on low heat.
- Meanwhile take another pan and add the milk, sugar, saffron strands and water into it and place it on medium heat.
- Once the ghee is hot add the sooji (semolina) and stir.
- Continue stirring taking care that the sooji (semolina) does not burn.
- Keep an eye on the milk,water and sugar solution also. If it starts boiling simmer the flame.
- After approximately 7-8 minutes you will see the sooji (semolina) changes its color to light golden.
- Lower the flame and add cardamon powder, chopped almonds, chopped cashews and raisins. Mix well.
- Now its time to add the sugar, water and milk solution. Put the flame to medium and slowly add the solution to roasted sooji (semolina). Stir continuously.
- The mixture has tendency to splutter so be careful as you mix.
- Now, the mixture starts thickening and starts leaving the sides of the pan.
- Give it a good mix and your sooji (semolina) halwa (dessert) is ready.
- Garnish it with chopped dry fruits of your choice, rose petals and saffron strands.
