Ingredients:
- 100 grams soya chunks
- 1 large onion - chopped
- 2 large tomato - chopped
- 1 green chili - chopped
- 4 large garlic
- 1 inch ginger
- 1/2 tsp turmeric powder
- 1 tsp kashmiri red chili powder
- 1 tsp coriander powder
- 1 bay leaf
- 4 black peppercons
- 1 tbsp fresh cream
- Salt - as per taste
Method:
- Heat oil in a wok/kadhai. Add roughly chopped ginger, garlic, onions and green chilies. Saute for 3-4 minutes on medium flame.
- Now add the cashews and chopped tomatoes and saute till the tomatoes turn soft.
- Let the mixture cool and then blend it to a paste.
- Meanwhile, boil water in a pan and add the soya chunks to it.
- Boil them for 2-3 minutes and set them aside.
- Once cooled wash the soya chunks in cold water and squeeze the extra water as shown in picture below.
- Now take another pan and heat oil in it. Add the boiled soya chunks to it and stir fry for 2 minutes on medium flame. Set it aside.
- Take the pan in which onions were sauteed and add oil to it and heat it.
- Now add the bay leaves and black peppercorns. Add cumin seeds and let them splutter.
- Keep the flame low and add the turmeric, kashmiri red chili powder and coriander powder and cook it for few seconds.
- Now add the blended masala paste and mix it well.
- Cover the pan and cook it for 3-4 minutes on low medium flame.
- Now add the stir fried soya chunks and mix well.
- Cover and cook for a minute.
- Now add warm water and mix. Adjust the consistency according to your choice.
- Add salt, stir and cover for 3-4 minutes on medium low flame. Lower the flame and add the fresh cream and stir well.
- Now add the kasuri methi and mix well. Finally add chopped coriander.
- Your soya chunks curry is ready to be served with Roti or rice.
