Ingredients:
- 7-8 Digestive Biscuits
- 3 tbsp melted Butter
- 200 grams Cream Cheese (at room temperature)
- 1/4 Cup Whipping Cream (chilled)
- 2 tbsp Powdered Sugar
- 1/4 Cup Chopped Strawberries
- 1 tbsp Strawberry Jam
- 1 drop Pink gel food Color (optional)
Method:
- Take the digestive biscuits and grind them to a powder.
- Add the melted butter and mix well.
- Take a muffin/cupcake tray and place the paper liners in it.
- Fill the cupcake/muffin liners with the digestive biscuit and butter mixture till it covers 1/4 of the liner.
- Place the tray in the freezer .
- Now, take room temperature cream cheese and soften it using spatula. Add the sugar and mix.
- Now add chilled whipped cream and beat using a whisker or hand mixer till the mixture is smooth and silky.
- Now, add the chopped strawberries and strawberry jam.
- Mix everything well.
- Add the cream mixture to the muffin/cupcake tray placed in the freezer.
- Smoothen using a spatula and place the tray into the freezer for 2 hours.
- Take out from the freezer and remove the liners.
- Garnish with strawberries cut in heart shape using cookie cutter. Enjoy!
