Paneer Capsicum Bhurji

Ingredients:

  • 2 cups crumbled paneer/cottage cheese
  • 1 onion large - chopped
  • 1 tsp ginger garlic paste/grated
  • 1 capsicum small - chopped
  • 1 tomato large - chopped
  • 1 green chili - finely chopped
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 3/4 tsp kashmiri red chili powder
  • 3/4 tsp coriander powder
  • 1 tsp kasuri methi crushed
  • 1 tbsp fresh coriander chopped
  • 1 tbsp tomato ketchup
  • Salt as per taste

Method:

  • Heat 2 tbsp oil in a pan and add 1 tsp cumin seeds and let them splutter.
  • Add chopped onion and saute on medium flame till the color of onion changes or becomes transparent.
  • Now add 1 tsp ginger-garlic paste or grated ginger-garlic along with green chili. 
  • Saute till the raw aroma fades.
  • Add chopped capsicum and mix well.
  • Cover the pan for 2 minutes or till the capsicum becomes tender (not mushy).
  • Now, add the chopped tomatoes and saute till tomatoes turn soft .
  • Now add the 1/2 tsp turmeric powder, 3/4 tsp kashmiri red chili powder, 1 tsp coriander powder and salt to taste.
  • Saute for a minute and add crumbled paneer and mix everything well.
  • Cover the pan for 3-4 minutes on low flame.
  • Now, add 1 tsp crushed kasuri methi and 1 tbsp tomato ketchup.
  • Mix it well.
  • Garnish with chopped fresh coriander leaves. 
  • Serve it.
