Dal Palak (Lentils - Spinach)

Ingredients:

  • 1/4 (50 grams) cup yellow moon dal 
  • 1/8 cup (20 grams) green split dal 
  • 1/8 cup (30 grams) pegion pea dal 
  • 1 tsp chana dal
  • 3 cups spinach - chopped and tightly packed
  • 1 tsp fresh coriander - finely chopped
  • 1 green chili - chopped 
  • 1 inch ginger - grated
  • 4-5 curry leaves
  • 3 cups warm water
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp kashmiri red chili powder
  • 1 tsp coriander powder
  • 1 tsp kasuri methi
  • 1/2 tsp dry mango (amchoor) powder
  • Pinch of asafoetida
  • 2 tbsp ghee (clarified butter) / oil
  • Salt as per taste

Method:

  • Mix all dals and soaked then in water for 30 minutes. Put it aside.
  • Add ghee or oil to a pressure cooker and place it on medium heat. 
  • Once the ghee/oil heats add cumin seeds and let them crackle.
  • Now add the asafoetida. 
  • Add the Curry leaves, green chili and ginger and saute on low flame for 1 minute.
  • Now add the chopped tomatoes and saute for a minute. Add the turmeric, red chili and coriander powder and mix.
  • Cover the cooker with the lid loosely for 2-3 minutes. Now add the soaked dal and mix well at medium flame. Add salt and cover the cooker for a minute. Add the dry mango powder.
  • Further add the chopped spinach and mix well. Now add warm water and close the pressure cooker and cook the dal for 3 whistles.
  • Once the dal palak is done add crushed kasuri methi and garnish with fresh chopped coriander leaves.
  • Dal palak can be served with roti (indian flat bread) or rice.
