Ingredients:
- 200 grams All purpose flour (approx 1 1/2 cup)
- 140 grams room temperature unsalted Butter
- 80 grams Powdered sugar(approx 1/2 cup) (varies according to taste)
- 4 tbsp Cornstarch
- 2 tbsp Milk
- 1 tsp Vanilla essence
- 20 grams Almond flour
- 1/4 tsp Almond essence(optional)
- 1/2 tsp salt (skip if using salted butter
- Gel food colours in green, orange, white and blue.
Method:
- Beat the butter using a hand blender/whisk till it turns pale and creamy.
- Now add sugar and mix it well.
- Add the vanilla essence, almond essence and milk to it and mix.
- In another bowl sieve the flour, cornstarch, salt (only if using unsalted butter) and almond flour to avoid any lumps.
- Add the dry ingredients to the butter sugar mixture in batches to combine well and form a dough.
- Adjust the the consistency of the the dough by adding more flour or milk (starting with 1/2 tsp of milk at a time).
- The dough should not stick to your hands and neither should it be crumbly.
- Divide the dough into 3 parts and pinch out little from each part for the blue of Ashok Chakra.
- Color 1st part with orange food color, 2nd with green and 3rd with little white color. (you can even leave the dough as it is)
- Now take each dough one by one and make a rectangle of same size of each dough.
- Put the green dough and place the white dough on it and the place the orange dough on top.
- Fold the rectangular log in a cling film and place on the refrigerator for 1 hour.
- Take the dough out and cut into 1/4 inch thickness.
- Place the cookies on baking sheet lined with parchment paper.
- Now take the blue dough and make little ball and press it in between your index finger and thumb.
- Place this blue circle in the center of the cookie on the white part like in the Indian flag.
- Now using a knife make marks on the blue circle to make it look like the Ashok Chakra.
- Bake all the cookies in a preheated Oven at 170 C for 15 minutes.
- Let the cookies cool down on a wire rack.
Handy Tips:
- If you feel the dough is sticky even after refrigeration add little flour and knead well.(adjust sugar accordingly)
