Ingredients:
- 1 1/2 Cups All purpose flour (180 grams)
- 1 Cup Room Temperature Yogurt (275 grams)
- 1/2 tsp Baking Soda
- 1 tsp Baking Powder
- 1/8 tsp Salt
- 3/4 Cup Fine Sugar (castor sugar) (150 grams)
- 1/2 Cup Vegetable Oil (120 ml)
- 1 tsp Vanilla Essence
- Berries and powdered sugar for Garnish (optional)
Method:
- Grease a 6 inch pan (you can even take a 8 inch pan for less thicker cake) and place parchment paper at the base.
- Add 1/2 tsp baking soda to the 1 Cup Yogurt.
- Mix and keep it aside to foam.
- In a large bowl take 3/4 cup sugar and 1/2 Cup Oil and whisk well till the mixture turns light and fluffy.
- Add in the baking soda and yogurt mixture and mix.
- Now add in 1 tsp Vanilla Essence and mix well.
- In the same bowl place a sieve and sift 1 1/2 cups all purpose flour, salt and 1 tsp baking powder.
- Gently fold the dry ingredients with wet ingredients.
- Do not over mix.
- Transfer the batter to the prepared cake tin.
- Bake at 180 C for 35-40 minutes or until the skewer inserted in the center comes out clean.
- Let the cake rest for 5 minutes and then demold it on a wired rack.
- Let the cake cool down completely.
- Garnish with berries and sprinkle powdered sugar.
