Ingredients:
- Ingredients for biscuit dough
- 1 1/2 Cup All Purpose Flour (190 grams)
- 3/4 Cup Powdered Sugar (100 grams)
- 4 tbsp Cocoa Powder (35 grams)
- 1/2 Cup Unsalted Butter (room temperature) (100 grams)
- 1 tbsp Corn starch/flour
- 1/8 tsp Salt
- 1 1/4 tsp Baking powder
- 1 tsp Vanilla Essence
- 3-4 tbsp milk
- Sugar crystals as required
- Ingredients for cream
- 1/4 Cup Unsalted Butter (50 grams)
- 3/4 Cup Powdered Sugar (100 grams)
- 4 tbsp Cocoa Powder (35 grams)
- Milk if required
Method:
- Method for dough
- Take a bowl and whisk the butter and sugar for 2-3 minutes till the mixture turns pale.
- Now add the vanilla essence and whisk.
- Place a sieve on the bowl and add flour, cocoa powder, baking powder & salt and sift.
- With the help of a spatula bring together all the ingredients. Now using your hands combine the ingredients by adding milk 1 tbsp at a time to forma dough. Do not knead.
- Place the dough ball between two parchment paper or cling film and roll it to 3-4 mm thickness.
- Cut the sides to make a rectangle or square.
- Using a scale/ruler make 6 cm X 2.5 cm rectangular cuts in the rolled dough.
- Now using a toothpick make holes like the bourbon biscuits.
- Sprinkle sugar crystals and press them gently with your hand.
- Place this dough sheet in the refrigerator for 15 minutes.
- Preheat the oven at 170 C .
- Take out the dough from refrigerator and gently lift the biscuits and place them one by one on the baking tray lined with parchment paper.
- Keep a distance of 1 inch between biscuits.
- Bake for 15 minutes.
- Take the biscuits out and let them sit on the baking tray for 5 minutes.
- Gently lift them one by one and place them on the wired rack for cooling.
- Method for cream
- Take butter, sugar and cocoa powder in a bowl and combine them well.
- Put the prepared cream in a zip lock bag or polybag and cut the corner for the cream to flow out easily.
- Assembling
- Once cooled take 1 biscuit and pipe the cream on it and place another biscuit on it like a sandwich.
- Your tasty homemade bourbon biscuits are ready to eat.
