Ingredients:
- 2 egg plant 500 grams (sliced in discs of 1/4 inch thickness)
- 1 tsp turmeric powder
- 1 tsp kashmiri red chili powder
- 1 tsp coriander powder
- 1 tsp dry mango powder
- 1 tsp salt
- 1/4 tsp roasted cumin seeds
- 1/4 tsp garam masala
- 1 tsp kasuri methi
- 1-1/2 tbsp oil
- 1/2 tbsp ginger garlic paste
Method:
- Cut the egg plant in 1/4 inch thickness round discs.
- Put them in a large bowl and add the dry masala's stated above, oil, ginger garlic paste.
- Cover the bowl with a lid and shake it so all the ingredients mix and egg plant gets coated well.
- Once done let it rest for 1 hour (marination).
- Preheat the oven at 180 C and line a baking tray with Parchment paper.
- Place the marinated egg plant discs on the baking tray and spray some olive oil. (optional)
- Bake for 30 minutes.Once done take the egg plant out of the oven and let them cool slightly. Baked eggplant is now ready to be served🙂
